 Litchi (Litchi chinensis)  belonging to  the family Sapindaceae  and  is an important subtropical fruit tree . India ranks second in the world next to China in its production. The fresh fruit has an attractive red colour and excellent quality ‘delicate, whitish juicy pulp’(aril)  with a pleasant flavor. The fruit is mostly eaten fresh. Dried and canned litchis are also popular and a highly flavoured squash is prepared from its fruits.
